Barley cabbage sausage potato sausage soup

My Mom made this and we LOVED it!!!
My wife makes it every once in a while and I’ll eat it for 3 days and then FREEZE the rest for later. LOTS of “STUFF”, I know, but the FINISHED PRODUCT is INCREDIBLE!!!!


1 lb. Ground Chuck or Beef (We use ground chuck)
1 lb. Ground Sausage (MED or HOT= Your preference on SPICE)
2- 28 OZ. cans of Crushed Tomatoes (NOTE: DO NOT DRAIN!!)
3-4 White Potatoes cut into “BITE” Size
1 NICE SIZE Head of Cabbage (CUT also into “BITE” Size Pieces) Do not use the center core!
4 to 6 Stalks of Celery CUT into small pieces
4 to 6 Carrots ALSO cut into small pieces
1 Medium to Large size White Onion — MINCED
2-3 Bay Leaves
1 Chicken Cube= OPTIONAL (We do use it)
1 Tablespoon Minced Garlic
1 Tablespoon Parsley
1/3 to 1/2 CUP Barley (Depending on how much you like Barley= we do)
SALT= Depending ON YOU
PEPPER= Depending ON YOU
PAPRIKA= AS MUCH as you like—LOL~~~
14 CUPS of COLD water
(OPTION) If you want to make it a “little” more SPICY you can put in a piece or two of Dried Árbol Chilis
I put a little in my bowl as I do like spicy


1) In a good size soup pot put in the Beef/Chuck and Sausage, Onion and Garlic and cook till MEAT is done. Chop it up as it’s cooking and mix together.
2) Now here’s the EASY PART….PUT ALL the REMAINING INGREDIENTS into the pot and bring to a boil.
3) NOW….Let it BOIL for 1 1/2 Hours=== A NICE “GENTLE” Boil not a CRAZY BOIL!!!
4) After THAT TURN THE HEAT DOWN to a SIMMER for another 1 to 1 1/2 Hours AND
(Tasting along the way)

OPTION: You can PUT IN 1 Package of Frozen Mixed Vegetables the LAST HALF hour of Cooking. (WE DON’T CARE FOR FROZEN Vegetables) You could maybe put in some Frozen PEAS…I just thought of that! Next time I’m going to put them in because it sounds good.

NOW……Get a nice size Serving Bowl and FILL it up!

Get a nice piece of GOOD DARK BROWN RYE bread and BUTTER it (USE REAL BUTTER) and ENJOY LIFE and it’s supposed to be ENJOYED!!

Soup (Leves) is where it’s at in the Hungarian World for sure!!!
